Chocolate Cupcake #1

this is the first recipie i tried for chocolate cupcakes:





The chocolate cake recipe came from Chockylit's cupcake blog. I am reprinting it below with my added step of mixing in chocolate chips. Chockylit points out that this recipe will make flat cupcakes, not domed ones. Do not try to overfill your cupcake liner. She recommend filling it 2/3 full. I changed the recipe to reflect the fact that I only filled mine about 1/2 way.
Makes 16 regular cupcakes.
1/2 cup (1 stick) butter, room temperature
1-1/4 cups sugar
2 large eggs, room temperature
3/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsweetened cocoa powder
1/2 cup milk
1 teaspoons vanilla
2/3 cup mini semi-sweet chocolate chips
Beat butter until softened. Add sugar and beat until light and fluffy, about 3 minutes. Add eggs, one at a time, beating until well combined. Measure the flour, baking powder, baking soda, salt, and cocoa powder into a small sized bowl and whisk to combine. Measure out the milk and vanilla and stir to combine. Add about a third of the dry ingredients to the butter/sugar and beat to combine. Add about a half of the milk/vanilla and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry. Stir in chocolate chips. Scoop batter into cupcake cups about 1/2 full. Bake at 350 degrees for 22-25 minutes or until a cake tester comes out clean.

greetings faithful readers. aka lauren.
i am sitting in my room reminiscing on my fun time i had in drawing class today. we drew rocks. it was envigorating. i drew my entire drawing with my lfet hand. i predict that today will be a very eventful day. im meeting for coffee or something with a girl from my new bible study group and then i have class at 2 and then at 3:3o till like 4:45. and then later i may end up going to a bible study on campus or something.

On Saturday im going to a Phil Wickham concert in Pflugerville!!

im pretty sure my mom is one of the coolest people. i dont know how she manages to do so much and still be a mom. its pretty insane. I mean, im pretty sure i cant go out and run 18 miles and then still be able to do things the rest of the day.

Anyways ive noticed some food laying around on my laptop keys so i need to clean it now. its like the remains of some oatmeal or something. i guess its handy to have a small snack if i get hungry haha jk.

Homework is calling to me from the abyss of my backpack.
